Rheological characteristics of alkali extracted corn starch

Alkali extraction of corn starch from corn grits has become actual in recent years as alternative to traditional wet milling process, due to economical reasons (lower steeping temperature and shorter time) in order to obtain starch which can be used in various industrial purposes. In this paper changes in viscosity of starch suspension of alkali extracted starch with temperature increase were tested, as well as effects of prolonged heating and mechanical force on starch gels. Alkali extracted starch showed thixotropic behaviour and degree of thixotropy increased with temperature increase. Swelling of the granule during gelation were followed by microscopy, as well as effects of prolonged heating and mechanical force on structure of formed starch gels and ageing of gels.
