Level of toxic elements and other mineral matters in wheat

Wheat is bread grain for the majority of world population. Wheat products, especially from whole grain, are considered to be healthy food. For the purpose of evaluating nutritive and health security, supervision samples from all districts of Vojvodina (Serbia, Yugoslavia) i.e. from more than 55 ranson spots have been collected. It was proved that there are significant differences in respect to the content of mineral matters depending on their origin. On the bases of measured values for toxic elements, it can be conclude that wheat from harvest 1999 was health accurate. However, levels of some investigated elements (lead and cadmium) in investigated samples of wheat are important, and therefore permanent and systematic control in necessary.
