Quality characteristics of the peanuts and products from the "Rosittza" sort

It has been carried out studies regarding the raw materials and products quality based on cultivar "Rosiza" peanuts. It has been found out that the overall protein content varies in the range of 27% to 30%, the carbohydrates from quantitative view point are from 15% to 20%, while the fat content is 48%-51%. Regarding the cultivar "Rositza" peanut raw comprise approximately 25%-28% of the overall amino acids content. The unsaturated fatty acids, mainly the oleic acid and the linolic acid, comprise 75% to 80% of the fat content. The Vitamin E varies from 8 to 9 mg/100g product, while the Vitamin B1 - from 0,03 to 0,23 mg/100g product respectively. The energy value of the cultivar "Rositza" peanuts raw material and products is in the range of 630 to 670 kcal.
