2002
Dostalova, J. | Pokorny, J. (Vysoka Skola Chemicko-technologicka, Prague (Czech Republic))
The article shows the evolution of fat and oils consumption in the Czech Republic between the years 1950 and 1999. The real consumption is compared to the recommended values. From 1950 to 1990, the fat consumption increased, a decrease being observed from 1990 to 1999. Nevertheless, the intake of saturated fatty acids is still high because it represents more than 40 % of all fatty acids and thus exceeds the recommended value which is 30 %. Daily intake of polyunsaturated fatty acids represents only 18.2 % of all fatty acids. The results show that the fat consumption in the Czech Republic is too high, and especially the intake of hidden fats in meat and milk products should decrease.
