The advantageous effects of carbohydrates on the central nervous system and on the absorption of aminoacids and microelements are discussed. The adverse effects of carbohydrates and sugar on the metabolism of fatty acides and on other metabolitic processes are depiced. The importance of the intake of polisaccharides are depicted.
