Product quality in aquaculture species is affected by numerous effects oroginating in the fish stock and in the husbandry conditions. In the present study data on several product quality characteristics are given for commercially cultured sturgeon. In an experiment carried out under practical farming conditions, two full-sib groups of sturgeon hybrids were raised in ponds and in a warmwater recirculation system. Fish growth, body composition, as well as chemical, physical, and sensorial flesh quality was investigated.
