Mutual connection of agroecological, biological and chemical risk factors and their influence on the quality and market value of animal products

The basis of the present study is a six year research carried out within sub-programme 13.2 "Non polluted and high value food: quality criteria and competitiveness". This programme is aimed at the elaborating of scientifically motivated basic concept for the production and processing of animals products in order to obtain high quality, healthy, harmless, and visually attractive products. In this process, hazardous or risk factors of food production were determined. The present investigations have been conducted to forecast the risk factors, determine degree of their dangerousness and search for possibilities of preventing them. The investigations and recommendations comprise the chain of risk factors, explain their consecution, mutual connection and influence. The study has been performed so as to cover the whole technological chain "from stable to table".
