A survey on the sanitation of local ice cream peddling in Los Banos, Laguna, and San Pablo City was conducted. This study was carried out to determine the microbiological quality of ice cream, cones and scoops as affected by the sanitary practices observed during peddling. The ice cream samples analyzed were collected as follows: ice cream 1 consisted of samples dispensed with unrinsed scoops into sterile wide-mouth bottle, ice cream 2 samples dispensed with scoops rinsed in water carried along with the cart into cones; and ice cream 3 samples dispensed with scoops rinsed in water containing 200 ppm sodium hypochlorite into sterile wide-mouth bottles. Results showed that ice cream 3 gave the highest number of samples which rated as good quality ice cream, while ice cream 2 had the least number of samples with good quality rating. It was further illustrated that the improper handling of cones and scoops had greatly influence the microbiological quality of ice cream as reflected on a high percentage of poor quality ice cream samples analyzed. The results also showed that the role of sanitation in handling ice cream during peddling should be emphasized to assure the ultimate consumer a good quality ice cream
