Carabao milk: X. nitrogen distribution, casein, albumin, globulin and proteose-peptone contents

The total nitrogen in 77 individual milk samples collected from six carabaos [Bubalus bubalis, (Linn) Castillo] regardless of their stage of lactation and age averaged 0.814% with values ranging from 0.588% to 1.096%. The average total nitrogen was distributed in milk as followed: 0.691% casein nitrogen; 0.057% albumin nitrogen; 0.025% globulin nitrogen; 0.019% proteose-peptone nitrogen and 0.23% non-protein nitrogen. With a total protein content ranging from 3.75% to 6.98% and averaging 5.16% the casein content ranged from 3.02% to 6.00% with a mean of 4.24%. Albumin varied from 0.025% to 0.773% with an over-all mean of 0.316% while globulin ranged from 0.038% to 0.274% having a mean of 0.152%. The proteose-peptone content of 77 individual samples gave a mean value of 0.113% with value ranging a mean of 0.001% to 0.281%. Results obtained indicated that carabao's milk is richer in total protein, casein, albumin and globulin than cow's milk
