The cultivar 'Carrasquenha' is well known by its double aptitude. However and as have been pointed out by several authors its good oil performance justifies the use of such cultivar in orchard which finality is oil production. So, the aim of the present study is to examine the effect of nitrogen and potassium fertilization on the oil quality index and oxidative stability for olive oils obtained from fruits in different stages of ripening. From the results we may to conclude that none of the treatments has influenciate the globality of oil quality index
