[Sterolic fraction of single-variety olive-oils from Beira Baixa [Portugal]]

Chemical analysis of the sterol fraction of the olive oil can be used to assess the degree of the oil's purity. This fraction usually includes two very important pentaciclic diols, erythrodiol and uvaol. To avoid adulteration contents of some of the components are regulated by EU article 2568/91. This paper reports on the sterol fraction analyses of three monovarietal olive oils, 'Galega vulgar?, 'Bical' and 'Cordovil de Castelo Branco'. Fruits were obtained in the 1998/99 harvest from selected olive trees in nine groves situated in the southern side of the region of Castelo Branco. Olive oil samples were extracted by Abencor equipment. Results show the three olive oils to be distinct mainly on account of b-sitosterol contents, D5 - avenasterol contents and erythrodiol plus uvaol contents.
