[Beta carotene and chlorophyll pigments in single-variety olive-oils from Beira Baixa, 1998-1999 campaign [Portugal]]

The study analyses dominant wavelength, optical purity, b-carotene content and chlorophylls content for monovarietal olive oils Galega vulgar, Bical and Cordovil de Castelo Branco. Fruits were obtained from selected olive trees in nine olive groves situated in the southern side of Castelo Branco's region, in the 1998/99 harvest. Olive oil samples were extracted by Abencor equipment. On the harvest date (November, 5) chlorophylls contents were higher in relation to b-carotene contents. Both contents in Galega and Bical olive oils showed a power function decrease with maturation. For Cordovil olive oil only á-carotene showed this behaviour. Dominant wavelength and optical purity decreased in relation to highler maturation stages for Galega and Cordovil oils. In the case of the Bical oil, dominant wavelength did not show a similar tendency
