Determination of minimum water activity values for the survival of bacteria in a culture medium

Minimum water activity (aw) values for the survival of selected bacterial strains were determined in BHI broth at optimum pH and culture temperature. Minimum aw for the survival of bacteria depended on the type of humectant (a compound affecting the water activity). Awmin were lowest in the broth adjusted with glycerol as compared with other humectants tested. Enterococcus faecalis was able to grow at aw 0.76 (6th day) while at aw 0.93 in the broth adjusted with NaCl. Pseudomonas fluorescens was able to grow at aw 0.95 (glycerol, 6th day) and at aw 0.98 (NaCl, 6th day). Cells of Escherichia coli were vital at aw 0.93 (glycerol, 6th day) while in the presence of NaCl grew at aw 0.96. Saccharides inhibited Escherichia coli and Pseudomonas fluorescens (aw 0.97 and 0.98, respectively, 6th day) more than Enterobacter aerogenes or Enterococcus faecalis (aw 0.96 and 0.93, respectively, sucrose, 6th day)
