Bacterial cultures from the genera Acetobacter, Lactobacillus and Lactococcus play an important role in food production and food biotechnology. Study of plasmids as well as of the regulation of extrachromosomal genetic elements replication contributes to better understanding of the genotypes of bacteria used in food technology. From the point of view of biotechnology , it is necessary to pay attention to the construction of cloning vectors based on own cryptic plasmids, suitable for the gene transfer and expression
