Possibility to detect penetration of residua from detergents and disinfectives into milk

We estimated the possibility to detect the residua of detergents and disinfectives (DD) in raw cow's milk. We added intentionally 11 DD types into individual samples of selected raw cow's milk and obtained samples which were tested by Delvotest SP, yoghurt test, yeast test. We determined acidity in oSH in them and estimated their consistency, colour and odour sensorially. DD concentrations in milk detectable by means of verifiable tests are rather high and their occurrence is in practice unlikely (levels under 0.01%). The titrable acidity, which is different from the level 0.05%, turned out to be the most sensitive method to trace acidic DD in milk. The alkaline preparations cause the change of titrable acidity in milk at concentration 0.2%. We can determine the presence of DD mostly at the level of contamination 0.5% which almost do not come into consideration. Neither Delvotest SP nor yeast test are able to indicate residua of the newest DD types in conditions of practice as they react to levels at which is the milk already sensorially totally deteriorated. Delvotest SP shows positive results from 0.75% DD in milk, and the yeast test becomes evident in inhibition zones from 10% DD. Results of the work show that the detection of DD residua in milk is difficult and unreliable. The proposal of methods how to eliminate the penetration of DD residua into milk intended for human nutrition consists therefore in introduction of strict technological discipline by creation of HACCP system
