[Scientific bases of the processes and devices of the refrigeration technology of food products]

The research work is aimed at the development of the scientific bases of the refrigeration technology which are necessary for designing processes and equipment of the stream refrigeration processing of the food raw materials and food products under conditions of the industrial refrigerators solving the energy- and resource-saving problems. As a result, scientific methods are developed to calculate heat and physical characteristics of meat and fish raw materials, the dynamics of the changes in the temperature fields, heat flows while cooling, freezing, defreezing, dynamics of drying losses of raw materials is studied, designing the tunnels of stream refrigeration processing is made as well as making technical and production examinations. The results are introduced at 20 meat-packing plants with the energy efficiency of 10-15 % and avoiding above-normative drying losses
