Acrisols of Cu Chi District - Ho Chi Minh city, located in the South-east of Vietnam are highly leaching, light texture soils, poor of nutrients in general, including sulphur. With the habit, farmers here used to apply for their crops mainly with Urea, DAP and KCL, no organic or manure are applied. For years, the fertilizers containing of S as single super phosphate, amonium sulfate... have not been used. As a results, the crop yield and quality of the products are continuously deducted. Study the effect of sulfur on the quality of high yielding rice for export showed that the rate of head rice received from the treatment applied 30-50 kg S/ha in Winter - Spring and 20-50 kg S/ha in the Summer - Autumn crops was significantly increased to the control from 4.80 - 8,64 percent and 4.71 - 12.28 percent, respectively. At the same time, the amino acid containing of S (Methionine + Systine) was also significantly increased to the control from 18.67-25.01 percent. The total content of amino acid was significantly higher from 26.67 - 28.19 percent in Winter-spring at the treatment of 30-50 kg S/ha and 22.08-22.66 percent in Summer - Autumn crops at the dose of 80-50 kg S/ha respectively. As the results, the protein content was also significantly increased from 4.7-9.78 percent at the treatment applied 40-50 kg S/ha in Winter-spring and 8.48 - 10.10 percent at 30-50 kg S/ha in Summer - Autumn crops. The possitive correlation was observed between amino acid containing of S (Methionine + Systine), total Amino acid and protein content with the dose of S applied, following the equation of y : aLn(X) + b
