Preliminary testing of chemical composition of X variety plum

Chemical composition of - X variety - plum (Vlasina complex, Serbia, Yugoslavia), showing high resistance and good cropping characteristic, with big fruits of spherical shape, average weight 42.5 kg, has been tested. Through application of standard physical and chemical methods, the following parameters have been determined in %: water (84.56), dry matter content (15.44), ash content (0.83), sand (0.036), total sugar content (8.2), total acid content (1.323), pectin content (0.735), vitamin C (17.0) and oil in kernel (59.93). By application of ASS method, the following elements in mg% have been determined: potassium (137.03), calcium (10.4), magnesium (8.6), sodium (4.8), iron (1.286), copper (0.138) and lead (0.083). It is of particular interest that presence of selenium has been determined in this plum, which, according to the latest scientific knowledge, is an extremely important food ingredient. In view of the fact that the X variety plum features low content of heavy metals and good bearing to freezing, it is a very prospective raw material for the food processing industry, in particular for manufacturing of purees and thick juices intended for consumption by the youngest population.
