Activity of enzymes and trace element content in bee honey

The objective of this study was to assess the relation between the activity of enzymes (invertase and diastase) and concentrations of trace essential elements (Fe, Mn, Zn, Cu) and risk elements (Pb, Cd, Hg). Thirty honey samples from various regions of the Czech Republic were divided into three groups according to their botanical origin (rape, multifloral, honeydew) and analysed. The differences in copper concentration were significant. A significant correlation was found between the activity values of invertase and diastase, and between enzyme activity and copper concentration. No significant correlation was found between enzyme activity and HMF concentration. Honeydew honey contained higher concentrations of essential and risk elements and simultaneously showed higher enzyme activity than blossom honey.
