[Beta-galactosidase of milk bacteria - an approach to its technological use]

The efficiency of three different methods of cell disruption, Microfluidizer (MF), APV High Pressure Homogenizer and Bead Mill (BM), were tested on beta-galactosidase release by the strain Streptococcus thermophilus 143. The highest efficiency in cell disruption was obtained with APV and BM methods (90 %). The lowest specific beta-galactosidase activity was observed when using BM. The specific activity in relation to the cell number before disruption was about five times higher with MF than with APV or BM methods.
