[Use of in vivo, resp. post mortem methods for evaluating muscle content in pigs]

The lean meat content (LMC) was evaluated by PIGLOG 105, SONOMARK SM-100 and ALOKA 500 in vivo, and by UNIFOM S-89, FOM and ZP after slaughter. The best results in vivo were obtained by the echo camera ALOKA 500. Very accurate estimation of LMC was assessed by the ZP method. The biggest difference between the real lean meat content and the estimated one was obtained using the apparatus UNIFOM-S 89. The results obtained in Slovak slaughterhouses between the years 1995 and 1999 (FOM apparatus) indicate that LMC increased but the slaughter weight remained the same.
