The influence of rapeseed oil and rapeseeds on the quality of chicken carcasses

The aim of this study was to investigate the effect of replacement of swine lard by rapeseed oil and rapeseeds in broiler diets on carcass quality, fat deposition and composition of fatty acids (FA) in the lipids of breast muscles and abdominal fat. The study was performed on 72 carcasses of Ross 208 male broilers fed a diet with either 7.5 % of swine lard or 6.2 % of rapeseed oil or 13.5 % of rapeseeds and 2 % of swine lard. The addition of rape products to broiler diets resulted in a decrease in carcass weights (P0.01) and influenced the yields of wings (P0.01), back (P0.05), skin and subcutaneous fat in the breast (P0.01), muscle and skin with subcutaneous fat (P0.05) in the carcass. It significantly affected (P0.01) the deposition of abdominal adipose tissue. The concentration of SFA was lowered, while that of MUFA and alpha-linolenic FA in muscles and in abdominal fat was increased. PUFA n-6 and PUFA n-3 ratio was lowered from 21.26 to 6.63 and 7.03 in the lipids of breast muscles and from 16.34 to 7.62 and 8.17 in the lipids of abdominal fat.
