Milk calcium and phosphorus content of dairy cattle breeds raised in Estonia and factors influencing it

Milk is a very important source of calcium. Milk calcium and phosphorus are of a great nutritive importance; they are necessary substances for bone and teeth formation. The calcium content in milk plays a critical role in rennet coagulation, and the calcium bonds between tha casein molecules are important factors for the consistency of cheese. In general there are a limited number of studies about the factors influencing milk mineral content. The similar situation exists in Estonia: milk calcium and phosphorus contents of local dairy cattle breeds have not been studied enough. The objective of this research was to compare milk calcium and phosphorus content in different breeds raised in Estonia. Based on the obtained results different factors and their magnitude of influence on the contents of calcium and phosphorus in milk were studied
