Content of lipids and essential fatty acids in chicken bones

The changes in content of total lipids and fatty acid of chicken thigh bones on age were studied. The thigh bones of chicken of race Starbro aged 1 to 50 days were used for studies. The bones were assayed for the water content and their lipids were extracted by the Folch's method. The total lipids, total fatty acids and fatty acid profile were determined in the lipid extract with spectrophotometric, titration and gas chromatography methods, respectively. The results for determination were arranged in an increasing order according to age, assigned to five age groups, and then analysed statistically. Changes in the lipid and fatty acid content were found to be significantly dependent on age and the differences between the means for the content of total lipids and the fatty acids in particular age groups were found statistically significant
