Three-year experiment concerning the effect of maturity stage and storage conditions on the chemical changes in aubergine Murena F1 fruits was carried out. The fruits were obtained from plants cultivated in a glasshouse and a plastic tunnel. Fruits were harvested at three maturity stages and packed using four different methods. After four-week storage at 12 deg C there were measured: dry matter, ascorbic acid, total sugars, nitrates, and nitrites. Dry matter differed non-significantly between objects, and decreased during the storage period. Differences in ascorbic acid and total sugars were also non-significant, but their content decreased by about 20percent after four-week storage. Amount of nitrates was low (up to 50 mg N-NO3/kg f.w.), and no nitrites were found
