The seasonal variations in the turbot flesh proximal chemical composition were found to involve the following four phases: 1 - from 15 November until 15 January; 2- from 15 January until 15 February; 3- from 15 February until 10 May; and 4 - from 10 May onwards. The phases corresponded to: 1 - a relative stability in the pure protein content and a rapid increase in fat content; 2 - a rapid increse in purin protein content at a high and relatively stable fat content; 3 - a rapid decrease in the fat and pure protein contents; and 4 - a fast increase in the contents of all the nutritive components
