The subsequent effect of green manures as summer catch crops (tancy phacelia, rye, hairy vetch, and horse bean) ploughed as whole plants and/or post harvest residues, and manuring with 4 and 6 t/ha of rye straw on the yielding and reducing sugar, total sugar, and vitamin C content in onion and red beet was studied. The value of the catch crops as a green manure was compared with 60 t/ha of dung. Onion was grown in the second and red beet in the third year after green manure application. Plots were fertilized with 400 and 600 kg/ha of NPK (2:2:3). The growing of vegetables on plots fertilized with green manures did not reduce the yields and amount of the studied components in comparison with unfertilized plots and those fertilized with dung. Fertilization with whole plants as a green manure increased the content of total sugars in onion and total and reducing sugars in red beet. Straw fertilization in a dose of 4 t/ha increased the yields of onion and red beet. The growing of onion in the second year after fertilization with straw considerably increased the content of vitamin C in onion in comparison with plots unfertilized with straw. Mineral fertilization increased vitamin C content in red beet. Application of 600 kg NPK/ha on plots fertilized with rye as a green manure increased the total sugar content in onion and reduced it in red beet.
