Qualitative changes in bovine thymus during cold storage. Pt. 2. Effect of wrapping

The material was divided into portions of about 120 g. Half of them were wrapped in poliethylene and aluminium foil and the other half were left unwrapped. The samples were stored at 4 deg C. for 17 days. Quality assessment was performed based on the following determinations done every 3-4 days; changes in soluble protein content, amino nitrogen content, pH and specific activity of adenosine desaminase (ADA) and purine nucleoside phosphorylase (PNP). The obtained results revealed that wrapping led to increase in the soluble protein content and a decrease in the specific activity of ADA and PNP. However, it had no effect on the amino nitrogen content of bovine thymus
