Effect of nitrogen nutrition on changes of technological characteristics in different wheat genotypes (Triticum aestivum L.)

A study has been undertaken to assess the effect of applied nitrogen doses on the yield level and quality characteristis of flour and bread of wheat varieties studied over three years under different weather conditions. Assessments included the contribution of 30 years of wheat breeding and the importance of nitrogen fertilization for the utilization of genetic yield potentials of the studied varieties. Finally, interactions among the studied treatments were assessed with respect to their influence on the studied characteristics of wheat. It was found that nitrogen significantly affected the utilization of genetic yield potentials and most of the quality characteristics of the studied varieties. Regarding the direct indicators of technological quality, bread volume and crumb number, no significant interaction were found between year of growing and nitrogen nutrition. In high-quality varieties, the genetically heritable quality characteristics tended to change to a certain measure under the effect of weather conditions. These changes, however, were much smaller than those occurring in varieties with lower quality. Correct nitrogen nutrition further increases the stability of the quality characteristics.
