Chemical composition and energy value of meat from diploid and triploid brook trout (Salvelinus fontinalis, Mitch.)

The chemical composition of meat from nonmature and mature diploid and triploid brook trout was determined. Specific differences were found depending on sex and ploidity. Lower value of moisture and protein were measured for nonmature fish and higher for fat and energy values of meat compared to mature ones despite their ploidity. Values of studied chemical characteristics showed considerable differences between individuals that belong to separate ploidity and sex in entering the breeding period. A higher fat content was found in the meat from the female triploids (6.5%). In the meat from the mature males the protein level - 18.21-19.36% was higher, while that of mineral salts (0.96-1.03%) was lower in comparison with that of the females.
