To find the easy and cheap local medium substrate, banana skin is one of the alternative carbon sources for xylanase production. Bacillus stearothermophylus DSM grown in several mediums such as SDB, NJ and NS, then we found that bacterial strain can be grown only in NS medium. The optimization was done at the shaker incubator in 125 mL. Erlenmeyer flasks with NS medium modification. The highest enzyme activity of 7.752 unit/ml min and reducing sugar of 13.493 mg/ml on optimum condition for the fermentation process was 8.55 deg. C 250 rpm and 0.75 percent for pH, temperature speed of agigation and concentration of substrate, respectively
