To protect the consumer against prion diseases, it is not allowed to use tissues of the central nervous system (CNS) of cattle, sheep and goats older than one year in meat products; however, tissues of the CNS of pigs may be used. This research aims to develop a method to differentiate CNS tissue of ruminants from that of pigs. Additionally, the effect of heating procedures of meats on the outcome of the method was evaluated and a survey was conducted on the presence of CNS tissues in sausages
