Rice wine improvement and upscale production: consumer acceptability and market assessment

A survey on the acceptability and possible market of the PhilRice [Philippine Rice Research Inst., Maligaya, Munoz, Nueva Ecija, Philippines] Tapuy [wine] was conducted among 65 respondents during the Asian Ethnic Food Feast (AEFF). The wine given for tasting had 14.38% AC [alcohol content], 16.20 deg Brix TSS [total soluble solids], and 4.16 pH. Sixty-three respondents said the wine was `moderately to very acceptable'; for its new packaging, 60 said the same. For the price of P100 per 375-ml bottle; 32 respondents found it `moderately to very affordable', six said it was neither affordable nor expensive; 26 said moderately expensive; and 1 said it was very expensive. They characterized the product as (a) light, mild, smooth; (b) bitter after taste, (c) palatable and aromatic, (d) sweet, (e) alcoholic, and (f) has export quality. Suggestions to improve the product included (a) have more blends and different flavors, (b) improve bottle and use colored bottle, (c) use aluminum cups, (d) present and market as a traditional product with a unique bottle and a cup, (e) use box for safer and more convenient transport, (f) color and sweeter taste for young and female drinkers, (g) use a bit lighter paper for label, (h) lower AC to 11% for international and tariff purposes, and (i) check methanol content
