The conversion of a banana plantation to the organic way of production has the duration of three years, processing itself through the implementation of a set of cultural techniques and the use of alternative factors of production to the ones used traditionally. In this process, the most significant alterations verified were the level of fertilization and the plague's control. Some of the fertilizers and pesticides revealed themselves as good alternatives in this way of production. On the other hand, some of the cultural techniques traditionally used in the conventional production remain in the organic production. Still in the chapter of the control of plagues, great importance was given to the development of a preventive strategy that it is based on the promotion of the airing in the interior of the plantations. The plantation of violet clover in the space between lines and the placing of residues in the line is presented as a good method for the control of weeds. In what concerns the productivity obtained and the quality level of the production, these were identical to the ones obtained in the conventional production. Post-harvest treatment processes and maturation were tried and two types of packaging were created, in order to create the necessary conditions to the commercialisation of the organic banana in the regional market
