Carcass values of lambs evaluated by means of sonography in vivo, on the bases of carcass dissection and according EUROP classifcation

We evaluated the fattening ability and carcass value of fattening lambs on the basis of carcass dissection, and their relation to sonographically measured values of muscle and fat tissue thickness in MLD as well as to EUROP classification. We studied lambs of Tsigai breed (T) from intensive fattening - 11 animals, and Tsigai x Suffolk crosses (TxSf) - 12 animals with 50 % genetic proportion of Sf breed. Average daily gain (ADG) was 300.6 g during the fattening period, average weight at the end of fattening 38.79 kg. Meat content was better in T x Sf crosses.The proportion of carcass parts in 1st class (shoulder, loin, thigh) was 69.05 %, proportion of thigh 33.59 % and proportion of kidney fat 1.15 %. The average weight of meat in carcass side was 5.45 kg, it represents 61.55 %. We found statistically significant difference between sexes when evaluating the MLD area. The MLD area in ewe lamb was 13.89 cm2, in ram lambs 16.73 square cm. Sonographically measured MLD thickness represented 25.16 mm and fat depth 3.07 mm. Correlation coefficients between MLD thickness measured by sonography and planimetrically measured area and some parameters of carcass value were as follows: for dressing percentage r=0.344 and/or 0.251, for proportion of carcass parts in 1st class r=0.132 and/or 0.342, meat proportion in carcass parts in 1st class r=0.203 and/or 0.270, proportion of thigh r=0.206 and/or 0.304, and for proportion of meat in the carcass r=0.238 and/or 0.384. Comparison of the fattening ability and carcass data according to EUROP classes showed that their values decreased from the highest to the lowest class, only the proportion of bones increased
