Design and test of sweet tamarind dryer

Tunnel dryer of 1*1.8*4.8 meters in width, height and length respectively, were designed, constructed and tested for drying of sweet tamarind. Three hundred kilograms of samples were able to dry in five carriages with 10 trays in each carriage within one hour of drying. Drying area of 28 square meters were heated with not air from LPG-burner and two of 1/2 hp horse-power axial flow fans. Drying air temperature was automatically controlled to maximum temperature of 100 deg C with the precision of 1 deg C. Heat treatments for one hour at 70-80 deg C reduced the fungal growth and also killed all insects in tamarind. Gas and electrical consumption are 1.5 kg/hr and 1.5 units with four labors. Drying of high moisture tamarind at 20-28 percent Mc(wb) to the safe storage moisture content of 11 percent(wb) in 8 to 10 hours showed possibility of harvesting tamarind before harvesting time with acceptable quality and safe storage. Drying reduced also fungal damage of tamarind in the case of raining in harvesting season.
