Analyzing comparison of protein and amino acid in mushroom mycelium and fruiting body was found that. The protein of Ganoderma lucidum in mycelium is about 17.80 percent, fruiting body 17.30 percent, the protein of Volvariella volvacea in mycelium is about 22.90 percent and the fruiting body 30.50 percent. the analysis of amino was found that the consist of essential amino acid and non-essential amino acid in both mushrooms was quantity differently. The essential amino acid of mycelium G. lucidum is higher than fruiting body; They are Isoleucine, Leucine, Lysine, Methionine, Threonine, Trytophan and Valine in quantity of 5.50, 10.10, 7.01, 1.74, 7.53, 2.82 and 7.32 mg/g; Some non-essential amino acid is higher than fruiting body; They are Alanine, Arginine, Aspartic, Glutamic, Histidine, Proline, Serine and Tyrosine. Mycelium's V. Volvacea has amino acid closed by fruiting body. The comparison of essential amino acid score was found that both mushrooms are the good nutrient source of Phenylalanine + Tryptophan and Valine. But mycelium of both mushrooms had Methionine higher than fruiting body which food protein from mushroom was limited.
