Study exmined production of citric acid from cocoa pulp extract using there microorganisms; Aspergillus niger TISTR 3089, Candida tropicalis TI STR 5023 and Saccharomyces cerevisiae TISTR 5088. A. niger TISTR 3089 produced the highest yield of citric acid, 20.31 percent on ninth day of fermentation, while C. tropicalis TISTR 5023 and S. cerevisiae TISTR 5088 produced 5.82 and 5.23 percent, respectively. 25 percent cocoa pulp extract and 30 deg C incubation temperature were optimum conditions for citric acid production by A niger TISTR 3089, giving 23.271 percent
