Fattening performance and fatty acid composition of meat in goats fed of wild grass supplemented with tofu cake

"The present study was undertaken to compare the effect of feeding of goats with only wild grass (mainly Bidens pilosa Scherft, wild grass group) with wild grass supplemented with tofu cake (7 : 3 DM base, tofu cake group). The daily gain, feed efficiency, fattening performance, lipids and fatty acids composition in the muscles from three parts of the body (fore part: M. deltoideus, middle part: M. longissimus thoracis, hind part: M. biceps femoris) were determined or calculated. Daily gain was higher in the tofu cake group than in the wild grass group. Feed efficiency was higher in the wild grass group than in the tofu cake group. Dressing percentage was not different between the two groups. Ratio in the muscle from the middle part of the body was higher in the tofu cake group than in the wild grass group. Lipid composition of the muscles from three parts of body consisted of 65% triacylglyceride, 15% phospholipid, 5% glycolipld and 1% cholesterol for each muscle. Content of triacylglyceride in the muscles from each part of the body was higher in the tofu cake group than in the wild grass group. Degree of unsaturated fatty acids of triacylglyceride in the muscles from each part of the body tended to be higher in the tofu cake group than in the wild grass group."
