Pre-harvest sprouting represents grain germination in spike in the field before harvest due to unsuitable weather conditions: rain and high relative air humidity during grain maturation period and harvesting. Sprouting may reduce quality of bread cereals. The objective of this study was to assess the resistance to pre-harvest sprouting from the dough development stage to the complete ripening stage of a number of rye varieties listed in Latvia. Hagberg Falling Number method was used for testing pre-harvest sprouting resistance. Falling number of grain was established for the first time starting from dough development stage until complete ripening stage, in four-day intervals. The results of two years research indicated, that rye 'Amilo' under growing conditions of Latvia was characterized by higher spouting resistance than other rye varieties.
