Changes of aflatoxin content in stored wet maize

Various moisture content maize were prepared and stored for 10 weeks in different places. Moisture content of wet maize samples were gradually decreased during storing and finally reached to 15-16 percent. Aspergillus flavus infection rate of hand shelled maize was very low, but mechanically shelled maize showed high infection. Aflatoxin content in wet maize showed interesting behavior. High moisture content maize, 29 percent, showed high peak of aflatoxin content after one month stored and then gradually decreased.
