Extraction of dietary fiber soybean waste for using in food industry

Objective of this research was to study several types of fiber content in dregs of soybean and hull of soybean from soy milk factory and soybean paste factory respectively. On the first step, chemical composition of dregs and hull of soybean investigated. Moisture and ash of dregs (5.2 percent moisture, ash 3.5 percent) compared with hull of soybean (5.6 percent moisture, ash 4.5 percent) were not significantly different (p = 0.05). Protein and fat in dregs were significantly higher than those in hull of soybean (p = 0.05). There were 36.0 percent protein and 6.0 percent fat in dregs and 10 percent and 1.9 percent respectively in hull of soybean. Crude Fiber, Neutral Detergent Fiber, Acid Detergent Fiber and Total Dietary Fiber in hull of soybean were significantly higher than those in dregs of soybean (p = 0.05). The fiber content in hull of soybean were 31.3 percent, 71.2 percent, 52.2 percent and 87.5 percent respectively. Cellulose, Hemicellulose and Lignin in hull of soybean were significantly higher than those in dregs of soybean (p = 0.05). There were 47.6 percent, 19 percent and 4.8 percent respectively in hull and 9.9 percent, 8.9 percent and 1.7 percent respectively in dregs of soybean. As the result of providing the dregs and hull of soybean to find the concentration of sodiumhydroxide (NaOH) which be used in the extraction (0.75, 1, 1.25 m), at the temperature of 27, 40, and 60 deg C, and the time period at 45, 60, and 75 minutes it was realized that every factors of the significant (p = 0.05) with the quality of the fiber extraction. The optimun condition to get percent yield and the high total dietary fiber from the extraction of the hull is the concentration of NaOH at 1.25 M, 27 deg C and 60 minutes while as for the dreg is at 1 m, 27 deg C and 60 minutes.
