Investigation on the technological parameters of new European winter brewing barley varieties

Eleven new European brewing varieties were cultivated in three trial fields in Bulgaria. The technological parameters: yield, grading, 1000-kernel weight, protein and germination were determined. The barley samples with protein content up to 12,5% were micromalted using pilot facility Seeger, according standard procedure of EBC. The obtained malts were qualified by the parameters: saccharification time, extract, extract differences, viscosity, soluble nitrogen, protein, Kolbach index and colour. The complex assessment shown that the investigated new European winter brewing barley varieties Boreale, Mombasa, Nectaria and Sunbeam on the base of yield and technological parameters exceed the standard varieties Esterel and Regina.
