Research results of study of fertilizers influence on biological value of winter wheat, spring triticale and spring rye were presented. Fertilizers application on sod-podzolic light loamy soil favored the increase of critical and irreplaceable amino acids content in winter cereals. Research results showed that in winter triticale the lysine content was 68,4-72,9%, critical amino acid content – 79,3-85,0%, irreplaceable amino acids – 105,7-110,0% of recommended by FAO/WHO. In winter wheat the lysine content was 68,4-72,9%, critical amino acid content – 79,3-85,0%, irreplaceable amino acids – 105,7-110,0%. Winter rye grains proved to be the best according to lysine content (80,9-89,5%), the balance of critical amino acid composition (93,4-101,5), irreplaceable amino acids (119,7-129,8%) and protein biological value. The amino acid content in rye protein corresponded to the recommended standards of the FAO/WHO
