This study describes characteristics of NIRS method, as well as its importance for wheat quality control, whether in industrial or laboratory environment. Due to the fact that application of NIRS method is non-regulated, one of the objectives of the present study was to give an overview of necessary requirements, parameters and methodology for validation of near infrared spectroscopy method, especially for moisture, protein, wet gluten and sedimentation value determination on whole wheat grain. Two sets of wheat samples were used in investigation which characteristics were similar to the wheat samples that will be used in a routine NIRS application. The obtained results indicated a relationship between the reference analytical methods and NIRS method for determination of relevant whole wheat quality parameters as well as contributed to validity demonstration on any analytical procedure. Also, obtained results enabled its reliable use wheather it referes to the single instrument or to the network of instruments.
