Growth of toxigenic Fusarium species and zearalenone synthesis in barley for malt production. [Master thesis]

In 11 samples of two rowed winter brewer barley from Kragujevac locality, Serbia, number of fungi per kernel was determined after 7 and 14 days incubation on. Afterwards, isolation and identification of fungi was performed in all barley samples. Most frequent species in all barley samples was Alternaria alternata. From all barley samples, 7 Fusarium species were isolated. Zearalenone concentrations in barley samples varried from 5.2 microgram/kg to 52 microgram/kg. Zearalenone was determined in all barley samples, green malt, dried malt and malt. The highest zearalenone concentration was determined in both malt samples after kilning. Zearalenone concentrations in malt samples were 35.6 or 17.8 microgram/kg of dry matter.
