The aim of this study was to investigate drying kinetics of dietary fibers from sugar beet and influence of pretreatment and drying temperature during convective on the quality of dietary fibers. It was found that Midilli model is the most suitable model for describing thin layer drying of dietary fibers from sugar beet, for all types of pretreatment used in the experiment. This model is also applicable for describing kinetics of microwave drying. As one of the main characteristics of dietary fibers, water holding capacity was investigated and the best values were obtained for use of microwave energy as pretreatment to hot air drying. Osmotic dehydratation was investigated on whole sugar beet and on the sugar beet pulp. It was found that it is possible to remove up to 50% of water initially present in fresh fibres. On the other side sugar beet was not suitable for osmotic dehydratation process.
