Suitability of tomato cultivars for processing into diced or crushed tomato products. Trials performed in 2003 [Lycopersicon esculentum Mill.; Emilia-Romagna]

The results are reported of the 14th year of testing on commercial tomato lines (11 hybrids), comparatively evaluated for suitability for processing into diced (pulp) or crushed packs on the basis of the following criteria: agronomical behaviour of the plant; sanitary, morphological, chemical, physical and physico-chemical characteristics of the fruits; processing yield on a pilot-scale processing line; quality of the final product (pulp). After taking into account that the utterly negative characteristics of the 2003 season which, although for apposite reasons, repeated the results of the 2002 season, have heavily impaired the trials, above all for late transplanted cultivars, the following conclusions can be drawn: some cultivars (Heinz 9997 among the early transplanted cultivars and, to a lesser extent, Guadalete and Red Sky in the same group and Leader, Perfectpeel and Riglio among the late transplanted cultivars) have shown a generally positive behaviour not only with regard to the agronomic aspects, but also to fruit and diced product quality. By contrast, UG and PX 2360539 gave negative results; the latter, although very good for agronomic characters, proved negative for fruit size and difficult peeling

Sono riportati i risultati del quattordicesimo anno di sperimentazione di confronto varietale fra cultivar di pomodoro da industria (11 ibridi), proposte dalle ditte sementiere, per valutare l'idoneità alla produzione di derivati quali triturati, polpe e/o cubettati di pomodoro. Il confronto ha riguardato il comportamento in campo, la valutazione della materia prima sotto l'aspetto delle caratteristiche morfologiche, fisiche, sanitarie, chimiche e chimico-fisiche della bacca, l'analisi della resa di trasformazione effettuata in linea pilota di trasformazione e la valutazione del derivato (polpa) ottenuto. Premesso che le caratteristiche assolutamente negative della campagna 2003, che, seppur per ragioni opposte, ha replicato quella 2002, hanno penalizzato fortemente lo sperimentazione, soprattutto per le varietà trapiantate in epoca più tardiva, dalla prova effettuata si possono trarre le seguenti conclusioni: alcune cultivar (Heinz 9997 fra le cultivar trapiantate in epoca precoce e, in misura minore, Guadalete e Red Sky nello stesso gruppo e Leader, Perfectpeel e Riglio fra le cultivar di epoca tardiva) hanno avuto un comportamento generalmente positivo, sia sotto l'aspetto agronomico, sia per quanto riguarda la qualità del frutto e del cubettato. Sul fronte opposto, hanno fornito risultati negativi le linee UG e PX 2360539, quest'ultima ottima per le caratteristiche agronomiche, ma negativa per la pezzatura e per la scarsa pelabilità
