إنجليزي. In order to avoid the necessity of having to resort to treatments with consented antifungal agents on the surface of non-edible cheese crusts, the effectiveness of hygiene treatments for the environment in the absence of the cheese was taken into consideration. The use of UV radiations in the drying rooms and the fumigation of dried disinfectants in all the rooms of the building where the cheese is stored or transits was shown to be effective and sufficient. To ensure the duration of the sanitizing effect it was necessary to adequately equip the building with an air filtration plant, with airtight doors in the store rooms and their correct use, and to cover the cheese with a plastic polymer film that would be removed at the moment of stringing and paraffination

Con lo scopo di evitare la necessità di ricorrere a trattamenti con antifungini, sia pure ammessi, sulla superficie dei formaggi a crosta non edibile, è stata valutata l´efficacia dei trattamenti di igiene ambientale applicati in assenza dei formaggi. L´impiego di radiazioni UV negli essiccatoi e delle fumigazioni disinfettanti a secco in tutti i locali dello stabilimento ove sostano e transitano i formaggi si è dimostrato efficace e sufficiente. D´altra parte, però, per una durata nel tempo dell´effetto sanitizzante, risulta necessario che gli stabilimenti siano dotati di un impianto di filtrazione dell´aria, che i magazzini abbiano porte a tenuta e che queste siano gestite in modo corretto, che i formaggi all´uscita dell´essiccatore vengano ricoperti con una pellicola di idoneo polimero plastico, da sostituire al momento dell´incordatura e della paraffinatura
