Components of Taru-Sake (sake stored in a cedar cask) were analyzed by GC-MS (gas chromatograph-mass spectrometry). Agatharesinol, sequirin-C, sugiresinol, and hydroxysugiresinol, a kind of norlignan, were isolated and identified from the non-volatility parts of Taru-Sake. Content of norlignans in Taru-Sake tended to increase as the storage period became longer. Norlignans in Taru-Sake had a deodorizing activity on arylmercaptan, a kind of unpleasant smell contained in the breath after eating garlic. Norlignans in Taru-Sake had an antioxiditive activity against the oxidization of linoleic acid.
